  • A solution of pure honey of good quality (meaning natural) does not become cloudy if you add 95 ° alcohol to it. If potato syrup is mixed with honey (which is often used by counterfeiters), the solution will become cloudy, whitish, like water from a few drops of milk.
  • Since it is sometimes very difficult to identify a fake honey, it is worth remembering a simple rule: pure flower and sunflower honey is quickly candied. Falsified and overheated honey sometimes does not crystallize at all.
  • If the purchased honey, when stored at home, becomes clogged with light yellow crystals, and a funnel with a brown uncrystallized mass remains in the center at the top, these are impurities.
  • The quality of honey is often checked with iodine. Add a few drops of a 1% solution of iodine and potassium iodide to the boiled and cooled solution of honey (1: 2). The appearance of a blue color will indicate an admixture of starch or flour. Adding 10% barium chloride to the honey solution described above will cause a white precipitate to form, which means that there is starch syrup in the impurity.

How else can you test honey?

  • Adding a few drops of strong ammonia to the original solution (boiled and cooled honey 1: 2) will cause the solution to turn brown and precipitate brown. This is also a reaction to starch syrup.
  • Most often, sugar syrup is added to honey, it can be detected if 5-10 drops of a 5% solution of silver nitrate are added to the honey solution. In the presence of beet (sugar) molasses in honey, a white precipitate falls out.
  • It is more difficult to detect an admixture of artificial honey (inverted sugar) at home. A relatively affordable resorption method. (This substance is used in drugstores to make ointments.)
  • If a chemical pencil has been preserved for a long time (now something is not visible on the market), it will help to identify impurities and traces of water. If the honey is pure and of high quality, the pencil does not leave a trace, if there are impurities, a purple or greenish line is visible from the pencil on the palm with a drop of honey.
